I love the Very Healthy Spiral Slicer!

I received the Very Healthy Spiral Slicer  at a discount to try so that I could give my honest and unbiased opinion.

When I first opened this and looked at it I was surprised how small it was. Then I was emailed two ebooks, one on how to use it, one with recipes and they also sent a wallpaper which has all the veggies that work with the slicer. I was happy to receive the "how to" ebook and it helped me tremendously.

I was surprised at all the veggies that work with it, like, sweet potatoes, carrots, potatoes, zucchini, summer squash, cucumbers, and the list goes on. So, I decided to use zucchini, carrot, and summer squash. I also chopped up an onion.

The Very Healthy Spiral Slicer worked great! Sliced those veggies with smoothly and easily. I was quite impressed.

After the slicing was done, I threw it all together in a skillet with some olive oil, garlic powder, salt and pepper. Sauteed till veggies were soft and tender and served as a side dish with pork chops. It was delicious! I even had seconds, hahaha! For those that don't know me, I am not big on veggies, most of them I have to force down, lol. I could eat them like this every day!

So, I would definitely recommend this product to anyone who wants a new way to eat their veggies. I know we will be using this quite often.

Below is a short video of my nephew helping me try out the Very Healthy Spiral Slicer. Enjoy!

OMGosh! What Wonderful Taco Soup Have I Made!

When Kroger was having their Taste of Mexico event at the beginning of this month, I discovered some new food. Mexican just happens to be at the top of my favorite foods list so I was pretty excited. Even though I missed all of the food demonstrations, I was still able to try new foods at home. And one of them was this awesome taco soup.

I would never have thought of making taco soup till I ran into a recipe for chicken taco soup, which would be good too but, I decided to change it up by using ground chuck and changing a few of the other ingredients.

Taco Soup

I must say that I even impressed myself. This soup is so good that it will be a favorite meal at my house. I will add the recipe at the end of this post so that all of you can make to too.

Shredded sharp cheddar cheese and sour cream with chives, yummy!

My grandson getting his first taste of this new recipe. He really enjoyed it too as long as he didn't see an onion or green pepper, lol. He only had to pick out a couple so I hid them well (under the cheese and sour cream).

Here is the recipe exactly how I made it:

Taco Soup

1 lb ground chuck
1 onion, chopped
1 green pepper, chopped
1 can whole kernel corn, drained & rinsed
1 15 oz can black beans (do not drain)
1 15 oz can chili hot beans (do not drain)
1 10 oz can Ro Tel diced tomatoes & green chilis
2 8 oz cans tomato sauce + 3 cans water

Brown ground chuck, onion, and green pepper in skillet till meat is cooked through. Drain.  While meat mixture is cooking, drain the corn and rinse with cold water. Open all the remaining cans and add them together in a pot big enough so that the soup can be stirred. Add the corn. Stir all this together. Place pot over a medium/low burner on the stove to start heating it. After the meat mixture is cooked and drained, add to pot. Now for the seasonings.

Add:

1 T. chili powder
1/2 t. garlic powder
1/4 t. onion powder
1/2 t. dried oregano
1/2 t. smoked paprika
2 t. ground cumin
1 t. black pepper

Stir thoroughly. Bring to a boil, reduce heat and simmer for 30 minutes or longer if desired. Stir ocassionally. For thicker or thinner soup, add less or more water but do not boil dry. Add shredded cheddar cheese and sour cream to bowl of soup. Eat with tortilla chips. Fantastic!

I just want to say that I don't add salt because I always figure that there is enough salt in the canned items and, in my opinion, this soup is awesome the way it is! Can't wait to eat the leftovers for dinner, yum yum!

Hope all of you enjoy this as much as we did! Happy cooking and eating!

Start Your Day With a Bowl of General Mills Fiber One Protein Cereal

Protein and fiber come together in one delicious cereal and two delicious flavors! New General Mills Fiber One Protein Cereal Maple Brown Sugar and New General Mills Fiber One Protein Cereal Cranberry Almond.

These delicious granola cereals have the powerful combination of protein and fiber. What a great way to start your day!

Fiber One Protein Maple Brown Sugar is a delicious granola cereal with the powerful combination of protein and fiber. It is a perfect blend of wholesome goodness, the taste of maple brown sugar and a delightful taste of sweetened granola with crunchy pecans. Per serving this flavor offers 5g of fiber and 6g(10g with milk) of protein.

Fiber One Protein Cereal Cranberry Almond is a delicious granola cereal with the powerful combination of protein and fiber. Get your taste buds ready for this delightfully tasty mix of crunchy almonds, sweetened cranberry pieces and sweetened granola. Per serving this flavor offers 6g of fiber and 6g(10g with milk) of protein.

I want to say that in my opinion these cereals are on the sweet side. Adding some unsweetened cereal such as Cheerios evens out the sweetness, also, this granola cereal is a great addition to yogurt for some crunchiness.

Chicken 'n' Dumplings, Oh My!

Chicken 'n' Dumplings just happens to be one of my signature dishes which we enjoy a few times during the winter months. For some reason, I have always thought of it as a "cold" weather food and really don't know why. We eat chili in the summer, why not chicken 'n' dumplings? I must remember this and make it a point to make it at least once during next summer.

You will need a whole chicken, Bisquick, onion, grated carrot, chicken broth (maybe) bay leaves, garlic powder, thyme, black pepper.

I always start with a whole chicken because it makes the best broth. Place chicken in a large pot and cover with water. Add 3-4 bay leaves(is not the same without these), pepper, thyme and garlic powder. (I don't measure the spices so you will need to add by taste) I do not add salt because I sometimes have to add some chicken broth and that has sodium and so does the Bisquick(dumplings). Bring to a boil, turn down heat, cover and cook for about an hour and a half. When done turn off heat and let cool for about a half hour. Then, take the chicken and place it on a platter or whatever works for you. I place it in a colander so it can drain and I can pour it back into pot. Get another pot and strain the broth into it. Cover the broth and refrigerate till next day. I do this so that I can remove the fat off the top before I finish up the dish. So much better when you remove the fat.

Now you want to remove the chicken from the bones and shred it or cut it up. Place in fridge till next day. Do not put it back in broth till after the fat is removed.

It's the next day and you are ready to finish up this wonderful dish. First you will use a slotted spoon and carefully remove as much fat as you possibly can from the top of the broth. Once this is done, place on stove and add the chicken, a chopped onion and some grated carrot. Now, if you think you will need more broth for the dumplings to cook, just add some chicken broth that you buy at the grocery store. Once all this is added turn up the heat and bring to a boil. While waiting for this to boil, follow the dumpling recipe (very easy) on the Bisquick box. In the photo the dumpling recipe was doubled. These are our favorite dumplings. Enjoy! This dish is awesome!

An Awesome Breakfast - Nancy's Quiche and Fresh Fruit

I had never heard of Nancy's Quiche until I went to stay the weekend at my sister's. The first time she served them, she served the mini quiche that comes in a variety of flavors. I was totally amazed at how good these were! She served them with a variety of fresh fruit. In fact, this was so good that every time I go to stay with her, at least one breakfast is the Nancy's Quiche and fresh fruit.

I want to make sure that I let you know that one time my sister bought a different brand of the quiche and they were so NOT good, we couldn't even eat them. Nancy's is the best in our opinion.

One day when I was on my way to my sisters, I stopped at Kroger to get a few things to take with me. I happened to notice that in the freezer by the breakfast items, Nancy's Quiche also came in an individual size. And in my favorite, which is the Quiche Lorraine! Love it! I had to pick up a couple of these so that we could have them with some fresh fruit. My mouth was watering and I couldn't wait for breakfast the next morning. (I know, doesn't have to be for breakfast, but my favorite time to eat them)

When I arrived at my sister's place, and she saw the individual size quiche, she said that she had noticed them before but had just never bought them. Well, needless to say, when morning arrived and we sat down to eat this scrumptious meal, we were not surprised at how good the quiche was. And just enough for one person. So, so yummy!

No photos of the mini ones yet. Was mad at myself for that when I realized that I wanted to share how good they with all of you!
